Sardines Over Charred Cabbage Wedges

Cabbage gets written off as a side. Give it high heat and a cast iron pan and it turns sweet, smoky and substantial enough to build a plate around.

This takes about ten minutes and most of that is the pan doing the work.

Ingredients

  • 1 tin Nice Cans sardines
  • 1 small head green cabbage, cut into 4 wedges
  • 3 tbsp olive oil
  • 1 lemon, halved
  • 2 tbsp chili oil
  • Flaky sea salt

Method

  1. Heat a cast iron skillet over high heat until smoking.
  2. Brush cabbage wedges generously with olive oil.
  3. Sear wedges 3-4 minutes per cut side until deeply charred, then a few minutes on the core side to soften.
  4. Transfer wedges to a platter.
  5. Open the tin of Nice Cans sardines and lay fillets over the warm cabbage.
  6. Drizzle with chili oil and a squeeze of lemon.
  7. Finish with flaky salt and serve immediately.

One tip

Do not move the wedges while they sear. The char is the whole point, and it only happens if you leave them alone.
