Sardines With Roasted Garlic White Beans & Torn Herbs

Roast the garlic ahead and this becomes a ten minute dinner. Roast it the night before and it becomes a five minute one.

Mash some of the beans and leave the rest whole so the texture goes both ways.

Ingredients

  • 1 tin Nice Cans sardines
  • 1 head garlic
  • 2 cans (15 oz each) white beans, drained
  • 3 tbsp olive oil, plus more for roasting
  • 1 tbsp chopped parsley
  • 1 tsp fresh thyme leaves
  • 1 lemon, juiced

Method

  1. Roast the whole garlic head drizzled with olive oil at 400°F for 35-40 minutes until soft and caramelized. This can be done ahead.
  2. Squeeze the roasted garlic cloves into a skillet with the white beans and olive oil.
  3. Warm over medium heat, mashing some of the beans lightly for texture.
  4. Stir in the lemon juice and season to taste.
  5. Transfer to a bowl and top with the sardines.
  6. Tear parsley and scatter with thyme over the top; finish with a final drizzle of olive oil.

One tip

Roast two heads while the oven is on. The second one keeps in the fridge for a week and makes this a weeknight dish.
