Sardines On Blistered Flatbread With Whipped Feta & Hot Honey

Salty, sweet and hot all landing at once. The whipped feta does the heavy lifting and takes about thirty seconds in a blender.

Good for feeding people standing up.

Ingredients

  • 1 tin Nice Cans sardines
  • 2 pieces flatbread or naan
  • 4 oz feta cheese
  • 2 tbsp heavy cream (or olive oil)
  • 2 tbsp hot honey
  • Pinch of chili flakes

Method

  1. Blend the feta with the heavy cream until smooth and whippable; season to taste.
  2. Char the flatbread directly over an open flame or in a hot dry skillet until blistered, about 1 minute per side.
  3. Spread the whipped feta generously over the warm flatbread.
  4. Arrange the sardines on top.
  5. Drizzle with hot honey and finish with a pinch of chili flakes.

One tip

Spread the feta while the bread is still hot. It slackens slightly and soaks in instead of sitting on top.
